How to Make Delicious Banana Cake Recipe

Ingredients

  • For the cake:

    • 1 ½ cups all-purpose flour (190g)
    • 1 cup granulated sugar (200g)
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • ½ cup unsalted butter, softened (115g)
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup buttermilk (120ml)
    • 1 cup mashed ripe bananas (about 2-3 medium bananas)
  • For the frosting (optional):

    • ½ cup unsalted butter, softened (115g)
    • 8 oz cream cheese, softened (225g)
    • 3-4 cups powdered sugar (360-480g)
    • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line with parchment paper.

  2. Prepare the dry ingredients:

    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream the butter and sugar:

    • In a large bowl, using an electric mixer beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs and vanilla:

    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Combine the buttermilk and bananas:

    • In a small bowl, mix the buttermilk and mashed bananas.
  6. Combine wet and dry ingredients:

    • Alternately add the flour mixture and the buttermilk mixture to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  7. Bake the cake:

    • Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cake:

    • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the frosting (if using):

    • In a large bowl, beat the softened butter and cream cheese together until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating until smooth. Mix in the vanilla extract.
  10. Frost the cake:

    • Once the cake is completely cooled, spread the cream cheese frosting over the top in an even layer.
